Angels On Horseback (Oysters en Brochette) Recipe

Angels On Horseback (Oysters en Brochette) recipe Serves/Makes: 2

Ingredients:

  • 12 medium-size raw oysters, shucked and drained
  • 6 slices lean bacon, cut in half
  • 1 clove garlic, chopped
  • 3 tablespoons lemon juice
  • 1 pinch cayenne
  • 1 teaspoon chopped parsley
  • Kosher salt and black pepper
  • 12 buttered toast rounds (optional)
How to cook:
  • Cut the bacon in half and cook in a microwave oven for approximately 1 minute or pan fry until the edges begin to curl but the bacon is still flexible. Drain well.
  • In the meantime, marinate the oysters in the garlic, lemon juice, cayenne, and parsley 10-15 minutes should do the trick.
  • Remove oysters from marinade, roll bacon around each oyster and secure with toothpick.
  • Season with a little kosher salt and a lot of freshly ground black pepper (or to taste).
  • Place the bacon-wrapped oysters under broiler for 8-10 minutes, or until bacon is crisp.
  • Turn carefully and broil other side for 4-5 minutes, or until bacon is crisp.
  • Serve at once as appetizers with toast points or a small salad.

Notes:

Angels on Horseback was a popular Victorian dish in England, served particularly as a savory snack after meals.
Angels on Horseback are oysters wrapped in bacon, served on buttered toast. Traditionally, the toast is cut into triangular pieces (aka "toast points".)
