Easy Smelt Gumbo or Soup Recipe

Ingredients:

  • 2 pounds smelt, cleaned and cut into bite-size pieces
  • 3 strips chopped bacon
  • 1 medium onion, chopped
  • 1 cup chopped celery
  • 1/4 cup green pepper
  • 1 quarter tomatoes
  • 1 large can tomato sauce
  • 1 package frozen okra, if you can find it
  • 2 quarters water
  • 2 cup cooked rice
How to cook Easy Smelt Gumbo or Soup:
  • Brown bacon in large pot.
  • Add onion, celery and green pepper. Cook until transparent.
  • Add tomato sauce and tomatoes and mix. Add water.
  • 15 minutes later add okra.
  • Last 15 minutes add smelt.
  • Serve with cooked rice.

Tips:

Fresh smelts should be stored refrigerated at 32°F to 40°F (0°C to 4°C), excess liquid drained, packed into airtight containers and eaten within 3 to 4 days, or 1 to 2 days when fried.
Smelts should be frozen at 0°F (-18°C), into airtight food containers, immediately after buying bought frozen, smelts should be eaten within 4 to 6 months for maximum freshness.
