Easy Smelt Gumbo or Soup Recipe
Serves/Makes: 4 - 6
Ingredients:
- 2 pounds smelt, cleaned and cut into bite-size pieces
- 3 strips chopped bacon
- 1 medium onion, chopped
- 1 cup chopped celery
- 1/4 cup green pepper
- 1 quarter tomatoes
- 1 large can tomato sauce
- 1 package frozen okra, if you can find it
- 2 quarters water
- 2 cup cooked rice
- Brown bacon in large pot.
- Add onion, celery and green pepper. Cook until transparent.
- Add tomato sauce and tomatoes and mix. Add water.
- 15 minutes later add okra.
- Last 15 minutes add smelt.
- Serve with cooked rice.
Notes:
Gumbo is a stew or soup originating in Louisiana which is popular across the Gulf Coast of the United States and into the U.S. South. It consists primarily of a strong stock, meat and/or shellfish, a thickener, and the vegetable "holy trinity" of celery, bell peppers, and onion. The soup is traditionally served over rice.
Tips:
Smelts should be frozen at 0°F (-18°C), into airtight food containers, immediately after buying bought frozen, smelts should be eaten within 4 to 6 months for maximum freshness.
