Filipino Bangus (Milkfish) Croquettes Recipe
Serves/Makes: 4
Ingredients:
- 1 cup Sarangani Bay smoked bangus (milkfish), flaked
- 2 cloves garlic, finely chopped
- 1 1/2 teaspoons salt
- 1 pinch black pepper
- 10 small potatoes, boiled, peeled and mashed
- 3/4 cup milk
- 2 tablespoons butter
- 2 tablespoons chopped green onion
- 2 eggs
- 6 tablespoons breadcrumbs
- Saute the garlic and add the flaked smoked bangus (milkfish). Season with salt and pepper.
- Add the mashed potatoes and milk and cook until mixture is almost dry.
- Add the butter and green onions and mix well.
- Shape into oval croquettes. Roll in lightly beaten eggs then in breadcrumbs, egg and breadcrumbs again. Pan fry until brown.
Notes:
Kining sud-ana makasingot sa ka lami. (This kind of food will make you sweat with its good taste).
Comments:
Bangus (milkfish) can be bought in Filipino stores and mullet may be substituted.
