Georgian Salmon in Vinegar Sauce Recipe
Serves/Makes: 4
Ingredients:
- 1 1/2 pounds salmon fillets
- 2 large bay leaves, crushed
- 1 medium onion, peeled and minced
- 1 cup white wine vinegar
- 1/2 cup water
- 1/2 teaspoon salt
- Freshly ground black pepper
- 2 tablespoons of chopped parsley
- Rub salmon with pepper to taste and bay leaves. Let it sit for 30 minutes.
- Prepare charcoal fire.
- In a large skillet, simmer the onion with vinegar, water and salt for 15 minutes.
- When charcoals are ready, grill the salmon until just flaky.
- Transfer the grilled salmon to the skillet and heat gently in the sauce for a minute or two.
- Serve the grilled salmon hot, garnished with parsley.
