Greek Baked Haddock Fillets Recipe

Ingredients:

  • 1 pound (454 g) frozen haddock fillets
  • 1 (19-ounce / 540-mL) can tomatoes, with juice
  • 1/2 cup (125 mL) soda crackers, crumbled
  • 1 teaspoon (5 mL) sugar
  • 1/4 teaspoon (1 mL) basil
  • 1/2 teaspoon (2.5 mL) salt
  • 3 green onions, finely minced
  • 1/4 cup (60 mL) freshly chopped parsley
  • 1/4 cup (60 mL) vegetable oil
  • 2 tablespoons (30 mL) flour
  • 1 tablespoon (15 mL) paprika
How to cook Greek Baked Haddock Fillets:
  • Pour tomatoes into an 8-inch (20-cm) square glass dish sprinkle tomatoes with soda cracker crumbs.
  • Sprinkle with sugar, basil and salt.
  • Mix together, using a fork.
  • Arrange frozen haddock (block) over tomatoes.
  • In a bowl, mix together green onions, parsley, vegetable oil, flour and paprika pour over fish.
  • Cover with waxed paper.
  • Microwave on 'MAXIMUM' for 8 to 10 minutes, until fish is cooked in the center.
  • Leave to rest for 5 minutes.
  • Serve.

Preparation time: 8 minutes
Cooking time: 10 minutes
Waiting time: 5 minutes
