Korean Noodles in Anchovy Broth with Squid Recipe
Serves/Makes: 2
Ingredients:
- 6 medium shrimps, cleaned
- 1 cup squid, cleaned, sliced
- 10 Korean dried anchovies (myeol chi)
- Several imitation crab meat
- 2 bunches noodles (so myon)
- 4 shiitake mushrooms (pyo go beo seot), halved
- 1/4 cup kimchi, squeezed
- 1/2 onion
- 2 green onions
- 1/2 tablespoon minced garlic
- 1 teaspoon soy sauce
- 1 tablespoon Korean chili powder (goo choo ga roo)
- Salt and pepper to taste
- In a pot add 7 cups of water and anchovies, bring to a boil, simmer for 10 minutes.
- Add kimchi, garlic and chili powder, cook for a minute. Add squid, bring to a boil.
- Put noodles, onion, shrimp, mushroom and crab meat, let boil for 4-5 minutes until noodles are done.
- Season the seafood noodle soup with soy sauce salt and pepper and serve hot.
