Milk-Poached Fish Recipe
Serves/Makes: 6
Ingredients:
- 1 (3-pound / 1.4-kg) fish
- Cold water
- 1 tablespoon (15 mL) coarse salt
- 2 cups (500 mL) milk
- Cut fish into individual servings.
- Cover fish with cold water; sprinkle with coarse salt.
- Soak fish for 5 minutes; drain.
- Pour milk into a 6-cup (1.5 L) dish.
- Cover; microwave for 2 minutes on 'MAXIMUM''.
- Transfer fish into boiling milk.
- Cover and microwave on ''MAXIMUM'' for 4 minutes per pound (454 g).
