Mussels Provencal Style Recipe
Serves/Makes: 4
Ingredients:
- 4 1/4 pounds (2 kg) mussels
- Water
- 2 tablespoons (30 mL) butter
- 6 garlic cloves, minced
- Minced parsley, to taste
- 2 teaspoons (10 mL) lemon juice
- 1 1/2 cups (375 mL) tomato sauce
- 1/2 cup (125 mL) breadcrumbs
- Preheat oven broiler.
- Clean and wash mussels.
- Pour 1 inch (2.5 cm) water into a large casserole.
- Add mussels, cover and cook over high heat, until mussel shells crack open.
- Throw away unopened shells drain and keep mussels warm.
- Reserve half of shells, throwing away empty halves.
- In a small saucepan, melt butter stir in garlic and parsley and cook over low heat, for 1 minute.
- Stir in lemon juice take away from heat.
- Fill each reserved shell half with tomato sauce.
- Sprinkle with breadcrumbs and dot with garlic butter.
- Broil for 2 to 3 minutes, until golden brown.
Notes:
Discard any mussel which shell did not crack open while cooking.
