Newburg Poached Shrimp Recipe

Ingredients:

  • 2 cups (500 mL) cooked or canned shrimps
  • 3 tablespoons (45 mL) butter
  • 1 teaspoon (5 mL) lemon juice
  • 1 teaspoon (5 mL) flour
  • 1/2 cup (125 mL) cream
  • 2 eggs yolks, slightly beaten
  • 2 tablespoons (30 mL) sherry
  • Salt and pepper to taste
How to cook:
  • Melt 1 tablespoon (15 mL) butter cook shrimps for 3 minutes.
  • Pour in lemon juice and cook for 1 minute set aside.
  • Melt remaining 2 tablespoons (30 mL) butter stir in flour.
  • Slowly pour in cream stir in beaten egg yolks.
  • Cook until thickened.
  • Stir in shrimps and sherry.
  • Season to taste.
  • Reheat.

Note:

Serve the Newburg Poached Shrimp with steamed rice.
