Oysters with Coriander Sauce Recipe
Serves/Makes: 6
Ingredients:
- 36 fresh oysters on the half shell, well-chilled
- 2 tablespoons finely chopped coriander
- 1 tablespoon finely snipped chives
- 1 tablespoon light soy sauce
- Juice of 1 large lime
- 1/2 teaspoon sugar
- 1/4 cup oil
- Freshly ground black pepper
- First, prepare the Coriander Sauce by combining all the ingredients (except oysters) adding the oil last.
- Season well with plenty of pepper.
- Arrange the oysters on a serving platter, drizzle each one with a little Coriander Sauce and serve.
