Oysters with Mushrooms Recipe
Serves/Makes: 8
Ingredients:
- 48 oysters
- 2 tablespoons (30 mL) butter
- 4 cups (1 L) sliced fresh mushrooms
- 2 tablespoons (30 mL) finely chopped onion
- 1 1/2 cups (375 mL) crumbled popped corn
- 1 1/2 cups (375 mL) dry breadcrumbs
- 3/4 teaspoon (3.75 mL) salt
- 1/4 teaspoon (1 mL) pepper
- 1/4 teaspoon (1 mL) freshly grated nutmeg
- 1/4 teaspoon (1 mL) savory
- 2/3 cup (160 mL) melted butter
- 1/4 cup (60 mL) heavy cream (35%)
- 2 tablespoons (30 mL) freshly chopped parsley
- Shell oysters, reserving liquids.
- In a fry pan, melt butter brown mushrooms and onion, until soft.
- Mix together crumbled popped corn, dry breadcrumbs, salt, pepper, nutmeg and savory mix in melted butter, cream and 5 tablespoons (75 mL) reserved cooking liquids.
- Spread 1/3 of breadcrumbs mixture into a buttered 3 1/2-quart (3.5-L) oven-proof dish.
- Mix together oysters and mushrooms mixture spread half of mixture over breadcrumbs mixture.
- Top with 1/3 of breadcrumbs mixture, then with remaining half oysters mixture.
- Top with remaining breadcrumbs mixture sprinkle with chopped parsley.
- Bake in a preheated 375°F (190°C) oven, for 30 minutes.
