Oysters with Mushrooms Recipe

Ingredients:

  • 48 oysters
  • 2 tablespoons (30 mL) butter
  • 4 cups (1 L) sliced fresh mushrooms
  • 2 tablespoons (30 mL) finely chopped onion
  • 1 1/2 cups (375 mL) crumbled popped corn
  • 1 1/2 cups (375 mL) dry breadcrumbs
  • 3/4 teaspoon (3.75 mL) salt
  • 1/4 teaspoon (1 mL) pepper
  • 1/4 teaspoon (1 mL) freshly grated nutmeg
  • 1/4 teaspoon (1 mL) savory
  • 2/3 cup (160 mL) melted butter
  • 1/4 cup (60 mL) heavy cream (35%)
  • 2 tablespoons (30 mL) freshly chopped parsley
How to cook Oysters with Mushrooms:
  • Shell oysters, reserving liquids.
  • In a fry pan, melt butter brown mushrooms and onion, until soft.
  • Mix together crumbled popped corn, dry breadcrumbs, salt, pepper, nutmeg and savory mix in melted butter, cream and 5 tablespoons (75 mL) reserved cooking liquids.
  • Spread 1/3 of breadcrumbs mixture into a buttered 3 1/2-quart (3.5-L) oven-proof dish.
  • Mix together oysters and mushrooms mixture spread half of mixture over breadcrumbs mixture.
  • Top with 1/3 of breadcrumbs mixture, then with remaining half oysters mixture.
  • Top with remaining breadcrumbs mixture sprinkle with chopped parsley.
  • Bake in a preheated 375°F (190°C) oven, for 30 minutes.

Note:

Here is an special way to serve oysters, even to those who cannot eat them raw.
