Poached Bay Bug Tails with Fresh Salsa Recipe

Ingredients:

  • 4 large Moreton Bay bug tails
  • 1 diced cucumber
  • 2 diced tomatoes
  • 1 diced red onion
  • 2 tablespoons chopped dill
  • Juice of one lime
  • Lettuce, shredded
  • Salt and pepper to taste
How to cook Poached Bay Bug Tails with Fresh Salsa:
  • Poach the Moreton Bay bug tails in salted water for 5-7 minutes. Remove the Bay bug tails from the pot and place in the refrigerator to chill.
  • Mix all the salsa ingredients. Split the tails lengthwise, place the Bay bug tails on a bed of shredded lettuce and pour the salsa over Bay bug meat.
  • Serve the Poached Bay Bug Tails with Fresh Salsa as salad or appetizer.
