Polynesian Shellfish Salad Recipe

Ingredients:

  • 2 cups cooked shellfish (your choice clams, mussels, scallops or a combination of them) meat
  • 3 cups cooked chopped potatoes
  • 1/2 cup chopped parsley
  • 3 tomatoes, chopped
  • 1 onion, chopped
  • 4-6 lettuce leaves
  • 2 lemons

  • Dressing:
  • 2 cloves garlic
  • 1 teaspoon pepper
  • Salt to taste
  • 2/3 cup oil
  • 1/3 cup vinegar
How to cook Polynesian Shellfish Salad:
  • Prepare dressing in a bowl by mixing crushed garlic, pepper, salt, oil and vinegar with a fork until well blended.
  • Line a bowl with the lettuce leaves.
  • Mix cooked shellfish with potatoes and the remaining ingredients and place in bowl. Add prepared dressing.
  • Serve topped with slices of lemon.
