Polynesian Shellfish with Coconut Cream Recipe

Ingredients:

  • 1/2 bucket cockles (clams), mussels or scallops
  • 2 cups coconut cream
  • 1 clove garlic, crushed
  • 1 onion, sliced
  • 1 tablespoon oil
  • 1 teaspoon coriander, crushed
  • 1/2 teaspoon minced fresh ginger
  • 1/2 teaspoon turmeric
  • 1 teaspoon soy sauce
  • Salt and pepper to taste
How to cook Polynesian Shellfish with Coconut Cream:
  • Clean shellfish with their half-shells and place in a pot.
  • Pour coconut cream over clams and cook for 10 minutes.
  • Fry onion, garlic and coriander in oil.
  • Pour over clams. Add ginger, turmeric, and soy sauce.
  • Simmer gently for 10 - 20 minutes or until the liquid starts to boil.
  • Serve the simmered shellfish hot with boiled taro or sweet potato.
