Poor Angels on Horseback Recipe
Serves/Makes: 2 - 4
Ingredients:
- 2 pounds mussels
- 8 bacon rashers
- 2 tablespoons honey
- 2 tablespoons tomato sauce
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon Tabasco sauce
Spicy Honey Glaze:
- Cook mussels in large saucepan of salted water, until they open, discard any that do not open.
- Remove mussel meat from shells.
- Cut bacon into 1 x 2-inch strips.
- Wrap mussels in bacon and thread onto skewers.
- To prepare Spicy Honey Glaze combine honey and sauces in a small bowl.
- Place the mussels skewers in a single layer in dish.
- Top with glaze.
- Marinate in refrigerator for 1 hour.
- Remove skewered mussels from glaze (reserve), barbecue until bacon is crisp and mussels are tender.
- Brush occasionally with reserved glaze during cooking.
Notes:
Angels on Horseback are oysters wrapped in bacon, served on buttered toast. Traditionally, the toast is cut into triangular pieces (aka "toast points".)
