Salmon with Rhubarb Sauce Recipe

Ingredients:

  • 1 pound salmon (red snapper or sole), cut up
  • 2 cups rhubarb cut in small pieces
  • 1/2 cup tomato sauce
  • 3 tablespoons oil
  • 1 teaspoon sugar
  • Salt to taste
  • 1/2 cup water
How to cook:
  • Wash rhubarb well.
  • Peel off hard skin, if any.
  • Cook all ingredients together (about 30 minutes).
  • When rhubarb is cooked thoroughly, add cut up pieces of salmon.
  • Serve The Salmon with Rhubarb Sauce hot or cold.

Notes:

This rhubarb sauce recipe with salmon is but one of many Sephardic recipes for the Passover/Pesach holiday.
Turkish-Jewish cooking is noted for having a lemony taste, and the rhubarb in this recipe slows down the rate of spoilage and adds to the lemony taste of this dish.

Rhubarb is a plant name for the many different species of Rheum, growing in the wild in the mountains of the Western and North-western provinces of China and in the adjoining Tibetan territory and in cultivation in much of Europe and the United States.
