Sauteed Trouts and White Wine Mayonnaise Recipe
Serves/Makes: 4
Ingredients:
- 4 (1/2-pound / 227-g each) trouts, cleaned
- 3 tablespoons (45 mL) butter
- 1 tablespoon (15 mL) lemon juice
- Brown trouts in hot melted butter and lemon juice, over medium heat, for 4 to 6 minutes on each side.
- Serve, along with white wine mayonnaise.
- 4 tablespoons (60 mL) white wine
- 3 egg yolks
- 1/2 cup (125 mL) oil
- In a casserole, boil white wine until reduced to 2 tablespoons (30 mL).
- In a blender or a food processor, well mix egg yolks.
- Meanwhile, while blender or food processor is working, very slowly pour in oil.
- In the same manner, pour in white wine.
- Mix well pour into a sauce-boat.
