Seafood in White Sauce Recipe
Serves/Makes: 5
Ingredients:
- Seafood (scallops, shrimps, crab meat, lobster meat, crab or lobster-flavored pollock), to taste
- 1 tablespoon (15 mL) butter
- 1 green onion, sliced
- Pinch of tarragon
- 1 mini bottle white wine
- 2 cups (500 mL) heavy cream (35%)
- Beurre manie (mixture of flour and soft butter)
- Salt and pepper
- 1 teaspoon (5 mL) red pepper
- Melt butter.
- Mix in green onion and tarragon.
- Pour in white wine.
- Cook seafood until no longer translucent set aside.
- Pour in cream.
- Bring to a boil.
- Thicken with beurre manie, stirring vigorously.
- Mix in cooked seafood.
- Salt and pepper, to taste.
- Serve, sprinkled with red pepper.
