Seafood in White Sauce Recipe

Ingredients:

  • Seafood (scallops, shrimps, crab meat, lobster meat, crab or lobster-flavored pollock), to taste
  • 1 tablespoon (15 mL) butter
  • 1 green onion, sliced
  • Pinch of tarragon
  • 1 mini bottle white wine
  • 2 cups (500 mL) heavy cream (35%)
  • Beurre manie (mixture of flour and soft butter)
  • Salt and pepper
  • 1 teaspoon (5 mL) red pepper
How to cook:
  • Melt butter.
  • Mix in green onion and tarragon.
  • Pour in white wine.
  • Cook seafood until no longer translucent set aside.
  • Pour in cream.
  • Bring to a boil.
  • Thicken with beurre manie, stirring vigorously.
  • Mix in cooked seafood.
  • Salt and pepper, to taste.
  • Serve, sprinkled with red pepper.

Note:

Either serve over boiled pasta or use to garnish a pizza.
