Shrimp Sauce Piquante (Shrimp Creole) Recipe

Ingredients:

  • 2 pounds peeled and deveined shrimp
  • 4 onions, finely chopped
  • 3 bell peppers, finely chopped
  • 1 1/2 cups chopped green onion tops
  • 1 1/2 cups chopped parsley
  • 1/2 cup oil
  • 1 (6-ounce) can tomato paste
  • 1 (10-ounce) can tomatoes with chilies
  • Pinch of sugar
  • 1 cup water
  • Salt, black pepper, and cayenne pepper to taste
How to cook Shrimp Sauce Piquante (Shrimp Creole):
  • Saute onions, bell pepper, 1/2 of the green onion tops and 1/2 of the parsley in oil until onions are transparent.
  • Add tomato paste, tomatoes with chilies, sugar and water and cook on low heat for 3 to 4 hours.
  • Add shrimp, remaining green onion tops, parsley, salt and cayenne pepper; continue to cook about 20 minutes.
  • Serve the Shrimp Sauce Piquante over cooked rice in soup bowls.
