Vietnamese Caramel Shrimps (Tom Rim) Recipe

Ingredients:

  • 1 pound raw medium-size shrimps, peeled and deveined
  • 1 1/2 tablespoons vegetable oil
  • 8 cloves garlic, crushed and finely chopped
  • 1 small red chili, finely sliced
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 tablespoon caramel syrup
  • 4 bowls boiled rice, to serve
    Garnishing:
  • 3 tablespoons chopped coriander leaves
  • 2 thinly sliced spring onions
How to cook Vietnamese Caramel Shrimps (Tom Rim):
  • Heat the oil in a wok, add the garlic and chili.
  • Stir fry for about 30 seconds.
  • Add the shrimps and pepper.
  • Cook for about 1 minute.
  • Add the salt and caramel syrup and cook for 1 further minute, stirring constantly.
  • To garnish, sprinkle with the coriander leaves and spring onions.
  • Serve with plain boiled rice.
