Angels On Horseback (Oysters en Brochette) Recipe
Serves/Makes: 2
Ingredients:
- 12 medium-size raw oysters, shucked and drained
- 6 slices lean bacon, cut in half
- 1 clove garlic, chopped
- 3 tablespoons lemon juice
- 1 pinch cayenne
- 1 teaspoon chopped parsley
- Kosher salt and black pepper
- 12 buttered toast rounds (optional)
How to cook:
- Cut the bacon in half and cook in a microwave oven for approximately 1 minute or pan fry until the edges begin to curl but the bacon is still flexible. Drain well.
- In the meantime, marinate the oysters in the garlic, lemon juice, cayenne, and parsley 10-15 minutes should do the trick.
- Remove oysters from marinade, roll bacon around each oyster and secure with toothpick.
- Season with a little kosher salt and a lot of freshly ground black pepper (or to taste).
- Place the bacon-wrapped oysters under broiler for 8-10 minutes, or until bacon is crisp.
- Turn carefully and broil other side for 4-5 minutes, or until bacon is crisp.
- Serve at once as appetizers with toast points or a small salad.

Angels on Horseback was a popular Victorian dish in England, served particularly as a savory snack after meals.
