Cajun Shrimp Balls Recipe

Serves/Makes: 6 - 8

Ingredients:

• 1 quart shrimp, peeled and ground
• 2 medium potatoes, boiled and mashed
• 1 bell pepper, chopped
• 1 onion, chopped
• 1 clove garlic, minced
• 1 egg
• Salt and pepper, to taste
• 1/2 cup of flour
• Oil
• 1 (8-ounce) can of tomato sauce

How to cook Cajun Shrimp Balls:

• Mix shrimp, potatoes, half of the bell pepper, half of the onion, garlic and egg. Season with salt and pepper.
• Shape into balls. Roll balls in flour and brown in hot oil.
• Place in skillet with other half of bell pepper and onion. Cover with tomato sauce.
• Simmer for 1 hour.
