Dressed Crab Venetian Style Recipe
Serves/Makes: 4
Ingredients:
- 4 medium live crabs
- Olive oil
- Juice of 1 lemon
- Salt
- Freshly ground black pepper
- 1 heaping tablespoon chopped parsley
How to cook Dressed Crab Venetian Style:
- Leave the crabs in a sink or bowl full of cold water for at least 2 hours before plunging them into gently boiling water. Cook for 10 - 15 minutes depending on size, until the shells turn red. Remove and cool.
- When cold break off the legs and pull the underside away from the top section. Discard the stomach sac and "dead men's fingers" (the grayish feathery gills).
- Take all the meat and soft parts from the shell, claws and legs. Place in a bowl. Flake the meat, picking out any shell fragments.
- Wash and dry the top section of each shell. Sprinkle the crab meat generously with olive oil, lemon juice, salt and pepper and parsley and fill the prepared shells with it. Chill slightly before serving.
