Greek Baked Haddock Fillets Recipe
Serves/Makes: 2 - 3
Ingredients:
- 1 pound (454 g) frozen haddock fillets
- 1 (19-ounce / 540-mL) can tomatoes, with juice
- 1/2 cup (125 mL) soda crackers, crumbled
- 1 teaspoon (5 mL) sugar
- 1/4 teaspoon (1 mL) basil
- 1/2 teaspoon (2.5 mL) salt
- 3 green onions, finely minced
- 1/4 cup (60 mL) freshly chopped parsley
- 1/4 cup (60 mL) vegetable oil
- 2 tablespoons (30 mL) flour
- 1 tablespoon (15 mL) paprika
How to cook:
- Pour tomatoes into an 8-inch (20-cm) square glass dish sprinkle tomatoes with soda cracker crumbs.
- Sprinkle with sugar, basil and salt.
- Mix together, using a fork.
- Arrange frozen haddock (block) over tomatoes.
- In a bowl, mix together green onions, parsley, vegetable oil, flour and paprika pour over fish.
- Cover with waxed paper.
- Microwave on 'MAXIMUM' for 8 to 10 minutes, until fish is cooked in the center.
- Leave to rest for 5 minutes.
- Serve.
