Grilled Swordfish with Cucumber Salsa Recipe
Serves/Makes: 4
Ingredients:
- 2 pounds fresh swordfish steaks (about 1 inch thick)
- Salt and pepper to taste
- Juice of 1 lime
- Cucumber Salsa (see recipe below)
How to cook:
- Season the swordfish steaks with salt and pepper.
- Preheat the grill and brush oil on the griddle to minimize sticking.
- Grill the swordfish steaks for 4-5 minutes per side, turning only once, and basting with the lime juice.
- To serve top the grilled swordfish with Cucumber Salsa.
Cucumber Salsa Ingredients:
- 1/2 cup diced red bell pepper
- 1/2 cup cucumber (peeled, seeded, and diced)
- 1/2 diced red onion
- 2 tablespoons chopped fresh dill
- Juice of 1 lime
- Salt and pepper to taste
Cucumber Salsa Preparation:
- Combine bell pepper, cucumber, onion, dill and lime juice.
- Salt and pepper to taste.
