Indonesian Barbecued Salmon Recipe
Serves/Makes: 4
Ingredients:
- 1 whole (4-pound / 2-kg) salmon or 2 whole (2-pound / 1-kg each) salmon trouts
- 1/4 pound (113 g) boiled shelled shrimps, cut into pieces
- 1 green onion, finely minced
- 1/2 cup (125 mL) peanut satay sauce
- 4 thin slices lime
How to cook:
- Bone salmon or salmon trouts.
- Into a bowl, mix together minced green onion, shrimp pieces and 1/4 cup (60 mL) peanut satay sauce.
- Stuff fish with mixture secure with a string.
- Preheat barbecue to medium-high.
- Generously oil rack.
- Lay fish over rack barbecue for 10 minutes.
- If fish sticks to the rack, it is not done turn only when done.
- Delicately turn fish barbecue for 10 minutes more.
- When done, delicately remove fish from barbecue brush fish with remaining sauce.
- Immediately garnish hot the barbecued salmon with lime slices.
- Serve.
