Lobster Shells Recipe
Serves/Makes: 6
Ingredients:
- 1 (11 1/4-ounce / 320 g) can frozen lobster meat
- 1/4 cup (60 mL) butter
- 1/4 cup (60 mL) finely chopped onion
- 2 cups (500 mL) minced mushrooms
- 1/4 cup (60 mL) flour
- Salt and pepper, to taste
- 1 cup (250 mL) light cream (10%)
- 1 cup (250 mL) grated Gruyere cheese
- 1/3 cup (80 mL) dry white wine
- 1 teaspoon (5 mL) lemon juice
- 1 tablespoon (15 mL) freshly chopped parsley
- 1/3 cup (80 mL) dry breadcrumbs
- 2 tablespoons (30 mL) melted butter
6 shells or individual dishes
How to cook:
- In a medium-size fry pan, melt butter brown onion and mushrooms for 5 minutes.
- Remove from heat.
- Stir in flour, salt and pepper, until well mixed.
- Slowly pour in cream, stirring.
- Back over heat, bring to a boil, stirring.
- Lower heat and simmer, still stirring, for 4 minutes, until thickened.
- Stir in cheese, until melted remove from heat.
- Pour in wine mix in lobster meat, lemon juice and parsley.
- Evenly fill shells or individual dishes with mixture.
- Mix together breadcrumbs and melted butter sprinkle lobster mixture with breadcrumbs mixture.
- Arrange shells or individual dishes onto a cookie sheet.
- Broil for 2 to 3 minutes, 4 inches (10 cm) from heat.
