Marinated Fried Fish Recipe
Serves/Makes: 4
Ingredients:
- 12 to 16 small fish fillets
- 4 tablespoons (35 g) flour
- 3 tablespoons (45 mL) oil
Marinade - 1 sweet red pepper, diced
- 1 teaspoon (5 mL) crushed chiles
- 1/2 garlic clove, minced
- 1/4 teaspoon (1 mL) sea salt
- 1/2 teaspoon (2.5 mL) oregano
- 1 cup (250 mL) olive oil
How to cook:
- Flour fish fillets.
- Heat oil over high heat; brown fish fillets on both sides, for approximately 1 minute on each side.
- Remove fish fillets from heat; set aside, into a large deep bowl.
- Into a small casserole, mix together all marinade ingredients; heat marinade for 5 minutes, over high heat.
- Pour marinade all over fish fillets; leave to rest for 1 hour.
- Flip fish fillets over into marinade; cover.
- Refrigerate for 3 hours, before serving.
