Milk-Poached Fish Recipe

Serves/Makes: 6

Ingredients:

1 (3-pound / 1.4-kg) fish
Cold water
1 tablespoon (15 mL) coarse salt
2 cups (500 mL) milk

How to cook:

Cut fish into individual servings.
Cover fish with cold water; sprinkle with coarse salt.
Soak fish for 5 minutes; drain.
Pour milk into a 6-cup (1.5 L) dish.
Cover; microwave for 2 minutes on 'MAXIMUM''.
Transfer fish into boiling milk.
Cover and microwave on ''MAXIMUM'' for 4 minutes per pound (454 g).

Notes:

Oven: 700 watts
Preparation time: 8 minutes
Cooking time: 6 to 15 minutes
