Poached Tilapia with Spinach Recipe
Serves/Makes: 4 - 6
Ingredients:
- 4 - 6 tilapia fillets (about 6 ounces each)
- 10 ounces fresh, cleaned spinach
- 1/4 cup softened butter
- 1 teaspoon lemon juice
- 1 teaspoon chopped parsley
- 1/2 teaspoon salt
- Dash of hot pepper sauce
How to cook:
- Poach Tilapia for 5-6 minutes.
- Steam spinach for 1-2 minutes.
- Add remaining four ingredients to the softened butter, whip smooth.
- Arrange spinach on a plate.
- Place tilapia on top of the spinach.
- Finish with a dollop of the lemon butter on each fillet.
