Salmon with Rhubarb Sauce Recipe
Serves/Makes: 4
Ingredients:
- 1 pound salmon (red snapper or sole), cut up
- 2 cups rhubarb cut in small pieces
- 1/2 cup tomato sauce
- 3 tablespoons oil
- 1 teaspoon sugar
- Salt to taste
- 1/2 cup water
How to cook:
- Wash rhubarb well.
- Peel off hard skin, if any.
- Cook all ingredients together (about 30 minutes).
- When rhubarb is cooked thoroughly, add cut up pieces of salmon.
- Serve The Salmon with Rhubarb Sauce hot or cold.

This rhubarb sauce recipe with salmon is but one of many Sephardic recipes for the Passover/Pesach holiday.
