Sauteed Sole Recipe

Serves/Makes: 4

Ingredients:

4 sole (or cod) fillets
White wine vinegar
Salt
Flour
Vegetable oil
2 to 3 tablespoons (30 to 45 mL) butter
1/3 cup (80 mL) lemon juice
1/3 cup (80 mL) freshly finely chopped parsley
1/2 lemon, quartered

How to cook:

Pat dry sole fillets with paper toweling.
Sprinkle sole fillets with white wine vinegar salt.
Coat fish fillets with flour.
Preheat a little vegetable oil
Brown sole fillets into hot oil.
Remove sole fillets from fry pan wipe fry pan with paper toweling.
Into fry pan, mix together butter, lemon juice and parsley.
Warm over low heat.
Pour all over sole fillets.
Serve, along with lemon quarters.
