Scallops Brochettes Recipe
Serves/Makes: 4
Ingredients:
- 8 large scallops, halved (corals reserved)
- 1 sweet onion, cut into 4 equal parts and layered
- 8 slices bacon, cut into 4 sections
- 8 fresh mushrooms
- Hot boiled rice
How to cook:
- Alternately thread:
- 1 onion layer
- 1 section bacon
- 1 scallop half
- 1 section bacon
- 1 mushroom
- 1 onion layer
- 1 section bacon
- 1 scallop
- 1 section bacon
- 1 onion section
onto each of the 8 wooden skewers. - Arrange brochettes, side by side, into a large plate.
- Mix together all coating ingredients (vegetable oil, white wine vinegar, salt and pepper) brush skewers with half of mixture.
- Microwave for 4 minutes on 'HIGH'.
- Turn over skewers thread 1 reserved coral at the end of each skewer.
- Brush with remaining coating mixture microwave for 3 minutes, until scallops are tender.
- Leave to rest for 3 minutes.
- Serve over hot boiled rice, coated with cooking juices.
