Seafood with Potato Recipe
Serves/Makes: 6 - 8
Ingredients:
- 1 pound (454 g) fresh or frozen haddock
- 2 (5-ounce / 142-g each) cans clams, with juice
- 1 pound (454 g) scallops, halved
- 1/4 cup (60 mL) butter or margarine
- 2 medium-size potatoes, diced
- 1/2 cup (125 mL) diced or minced carrot
- 1 large onion, diced
- 1/4 cup (60 mL) water
- 1 pound (454 g) small shrimps (optional)
- 1 cup (250 mL) light cream
- 1/2 teaspoon (2.5 mL) curry powder (optional)
- Salt and pepper, to taste
How to cook:
- Into an 8-cup (2-L) bowl, melt butter or margarine on 'HIGH', for 1 minute.
- Well mix in potatoes, carrot and onion.
- Pour in water cover and microwave on 'MEDIUM-HIGH', for 10 minutes, stirring once, at half-time.
- Cut haddock into individual servings add fish to vegetables, along with clams, and juice.
- Microwave on 'MEDIUM' for 6 minutes.
- Well mix in scallops, shrimps (if desired), cream, curry powder, salt and pepper.
- When almost ready to serve, cover and microwave mixture for 8 minutes, on 'MEDIUM'.

Oven: 700 watts
Preparation time: 12 minutes
Cooking time: 24 minutes
An other excellent seafood dish that, even though it is not a soup, should be served in a soup bowl, along with large, hot buttered biscuits.
