Shellfish Antipasto Recipe
Serves/Makes: 8
Ingredients:
- 1 pound (454 g) fresh small squids
- 1 pound (454 g) fresh scallops
- 1 pound (454 g) fresh shrimps
- 6 cups (1.5 L) water
- 1 celery stalk, grossly chopped
- 1 small onion
- 1 bay leaf
- 1/2 teaspoon (2.5 mL) salt
- 6 peppercorns
- 2 lemon rind strips
How to cook:
- Into a casserole, mix together water, celery, onion, bay leaf, salt, peppercorns and lemon rind.
- Bring to a boil.
- Lower heat, cover and simmer for 20 minutes.
- Strain pour cooking liquid back into casserole reserve.
- Holding each squid under cold running water, remove skin.
- Press the insides out remove head and transparent center bone.
- Well wash squid cut into small strips.
- If desired, cut each tentacle into 2 or 4 parts.
- Cut scallops into 4 equal parts.
- Shell and clean shrimps.
- Bring reserved cooking liquid to a slow boil add squids and simmer for 3 minutes, until tender.
- Remove squids with a slotted spoon set aside.
- Bring cooking liquid back to a slow boil add scallop pieces and simmer for 3 minutes, until no longer translucent.
- Remove scallop pieces with a slotted spoon set aside.
- Bring cooking liquid back to a slow boil add shrimps and simmer for approximately 3 minutes, until no longer translucent.
- Mix together squids, scallop pieces and shrimps into a bowl.
- Prepare salad dressing.
- Pour salad dressing over shellfish mixture, stirring delicately.
- Cover and marinate, refrigerated, for at least 1 hour but no more than 4 hours, stirring every once in a while.
- Stir before transferring into a serving dish.
Salad Dressing Ingredients:
- 1/4 cup (60 mL) oil
- 1/4 cup (60 mL) lemon juice
- 1 large garlic clove, finely chopped
- 2 tablespoons (30 mL) freshly chopped coriander
- 1/2 teaspoon (2.5 mL) salt
- 1/4 teaspoon (1 mL) pepper
Salad Dressing Preparation:
- Into a small bowl, whip together oil, lemon juice, garlic, coriander, salt and pepper.
