Simmered Sole with Tabasco Sauce Recipe
Serves/Makes: 1
Ingredients:
- 1 sole fillet
- 1/2 ounce (14 mL) vegetable oil
- Pinch of salt
- Pinch of pepper
- 1 ounce (28 g) diced sweet green pepper
- 1 ounce (28 g) diced sweet red pepper
- 1 ounce (28 g) diced tomato
- 2 ounces (56 mL) dry white wine
- 3 or 4 drops Tabasco sauce, to taste
How to cook:
- Into a fry pan, heat vegetable oil.
- Fry sole fillet for 2 to 3 minutes.
- Sprinkle fillet with salt and pepper.
- Add green pepper, red pepper and tomato dices, dry white wine and Tabasco sauce simmer for 1 to 2 minutes.
- Transfer fish fillet onto a hot plate.
- Boil cooking juices until reduced by approximately 50%.
- Pour mixture all over sole fillet.
- Serve.
Note:
Serve the Simmered Sole along with rice and vegetables, garnished with a parsley sprig and a lemon wedge.
