South African Fish Kabobs Recipe
Serves/Makes: 4 - 6
Ingredients:
- 2 pounds firm white fish, cubed
- 1 medium onion, sliced
- Juice from 1 lemon
- 2 teaspoons red wine vinegar
- 3 tablespoons olive oil
- 1/2 teaspoon thyme
- 1/2 teaspoon basil
- 1/2 teaspoon rosemary
- Salt and pepper to taste
- 6 medium bay leaves
- 6 medium cherry tomatoes
- 12 small mushroom caps
How to cook:
- Combine all ingredients, except tomatoes and mushroom caps in a large bowl, marinate for 30 minutes.
- Thread fish, tomatoes and mushrooms on to skewers, grill for 10 minutes in broiler or over hot coals.
