Tanzanian Fiery Fried Fish and Rice Recipe
Serves/Makes: 8
Ingredients:
- 4 pounds red snapper or halibut
- 4 large tomatoes, sliced
- 2 bell peppers, sliced in rings
- 2 jalapeno chiles, seeds and stems removed, chopped
- 2 onions, chopped
- 2 cups water
- Juice and peel of 1 lemon
- 1 tablespoons salt
- 1 tablespoons pepper
- 1/2 cup vegetable oil
- 2 bay leaves
- Salt and pepper to taste
- 1 cup flour
- 4 cups cooked rice (cook rice as per directions on package)
How to cook:
- Cook the tomatoes, bell pepper, jalapenos, onions, lemon juice, lemon peel, salt, pepper, water, oil and bay leaves in a large saucepan over moderate heat for 25 minutes.
- Meanwhile cut the red snapper into 4-ounce pieces and rub with salt and pepper and then dip in the flour. Fry the red snapper in 1/2-inch hot oil until brown and tender.
- To serve, place the cooked rice on a large platter.
- Put the fried red snapper pieces on top of rice and pour the sauce over everything.
