Thai Barbecued Prawn on a Stick Recipe
Serves/Makes: 2
Ingredients:
- 8 spiny-clawed prawns (shrimps)
- 1/2 teaspoon ground pepper
- 1 tablespoon light soy sauce
- 1 teaspoon star anise powder
For Sauce: - 1/2 teaspoon dry mustard
- 1 tablespoon orange juice
- 1 teaspoon sugar
- 1/2 teaspoon salt
How to cook:
- Wash, shell the prawn (shrimp) but leave the head and the tail fans attached. Marinate in the soy sauce mixed with the pepper and the star anise powder then run a sharpened stick through the length of each prawn (shrimp).
- Roast the prawn (shrimp) slowly over a low fire, covering them with a sheet of aluminum foil. As they cook, brush them with the marinade form time to time.
- When done, place on a plate and serve with a bowl of sauce prepared by stirring the ingredients together until smooth.
