Thai Prawn Roll in Seaweed Recipe
Serves/Makes: 2 - 4
Ingredients:
- 5 ounces ground prawn (shrimp)
- 2 ounces ground pork
- 2 ounces ground squid (calamari)
- 1 sheet dried seaweed
- 1/2 cup shredded kale leaf
- 1/2 teaspoon ground pepper
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1 thinly sliced red spur chili
- 1 tablespoon coriander leaves
- 3 cups cooking oil for frying
How to cook:
- Mix the prawn (shrimp), pork, and squid (calamari) together then, knead in the pepper, salt, and sugar. Spread the fried mixture over the surface of the sheet of seaweed to a depth of about a centimeter and then roll up to form a long roll.
- Fry in moderately hot oil over a medium heat for about 8-10 minutes. Remove from the oil and cut into sections.
- Fry the shredded kale in plenty of oil over a low heat, until crisp, removing from the oil, drain and then spread on a serving dish. Place the sections of prawn (shrimp) roll on the bed of fried kale and put a coriander leaf with a slice of chili on each one.
