Caribbean Grilled Mahi-Mahi Fillets Recipe

Caribbean Grilled Mahi-Mahi Fillets recipe Serves/Makes: 4

Ingredients:

  • 4 mahi-mahi fillets (6 ounces each )
  • 1/4 cup shallots, chopped
  • 1/3 cup red bell pepper, chopped
  • 1/3 cup yellow bell pepper, chopped
  • 3 tablespoons olive oil
  • 3/4 cup chunky salsa
  • 1 1/2 tablespoon chopped cilantro
  • 1/4 cup apricot preserves
  • 3/4 teaspoon garlic salt
  • seasoning salt
How to cook Caribbean Grilled Mahi-Mahi Fillets:
  • In a large skillet, heat 1 tablespoon of the olive oil over a medium heat until hot.
  • Add shallots and bell pepper and saute 5 minutes.
  • Add salsa, apricot preserves, cilantro, and garlic salt.
  • Blend well and cook 2 minutes.
  • Brush the mahi-mahi fillets with the remaining olive oil and sprinkle with seasoning salt.
  • Grill or broil 5 minutes on each side or until fish starts to flake.
  • Spoon bell pepper mixture over the Caribbean Grilled Mahi-Mahi Fillets before serving.

Notes:

If desired, use King fish, Redfish or any other beefy fish, instead of mahi-mahi.
